Chicken and Orzo Tetrazzini

I took out some chicken earlier in the day to use for dinner and after a quick glance over our refrigerator shelves and pantry (mushrooms (check),  fresh thyme (check), peas (check), cream (check), orzo (check)) I decided something along the lines of chicken tetrazzini was in order.  So, a skillet, two saucepans and a pot later this afternoon I was placing a baking dish brimming with creamy goodness in the oven.

Oatmeal Cranberry Bars

With both kids in school now, baking these days needs to be simple and quick … just like my posts need to be concise and to the point. You see, homework, lunchbox prep, dinner and making sure uniforms are cleaned and pressed take up the better part of my afternoons nowadays. So here it goes: these Oatmeal Cranberry Bars  are really quite healthy.

Corn and Green Bean Salad with a Mint Yogurt Dressing

When we bought our first house in Astoria with it came a small garden that, come every spring, would become overgrown with dense stems of bright green mint. After our move  just over two years ago, I made sure to transplant some of that vibrant mint to our new garden so that for the latter half of spring, all of summer and most of fall we always have fresh mint on hand.
