Thanksgiving Ideas

Are you hosting Thanksgiving this year? I am and I’ve been planning what to make for weeks. Along with the usual suspects of turkey and the traditional Greek rice stuffing, I’m hoping to bring a couple of new flavors to our holiday table with a side dish of Creamed Onions and another of  Sauteed Kale and Mushrooms. Have you decided exactly what you’ll be serving? Are you sticking with tradition or cooking up something new?

Whether you’ve decided exactly what you’re making or not, I thought I’d share some ideas to help you all set a delicious Thanksgiving table this Thursday.

Greek Pumpkin Pie — this savory/sweet pita, the general Greek term for either sweet or savory pies, offers fresh seasonal flavors a new take on your classic pumpkin pie … and it can be eaten as an appetizer or dessert.

Pumpkin and Coconut Milk Soup — This velvety soup combines the quintessential Autumn and Thanksgiving ingredient (yup, PUMPKIN) with some not so traditional spices like curry, nutmeg and crushed red pepper and creamy coconut milk. For some added spunk, serve it in shot glasses topped with a cool spoonful of thick Greek yogurt over top.

Tyropita (Greek Cheese Pie) — Because you don’t need much more
to fuss over this holiday, try these quick and easy cheese pie recipes that are sure to satisfy dinner guests. Both this Tyropita as well as this Kaseropita don’t require much time fussing over rolling out phyllo — make the former with no phyllo at all or the latter using store bought phyllo that can be scrunched into your baking tin with no worries at all.

Citrus Roasted Turkey — Use this recipe for citrus chicken to roast your Thanksgiving Turkey and you will not be disappointed (just adjust the cooking time accordingly of course). Fresh, seasonal, citrusy … it’s got it all.

Cranberry Chutney — This not too sweet, somewhat tangy chutney is the perfect topping to any finely roasted turkey. Tart cranberries, sweet apples and onions with a dash of ground mustard … all roasted to perfection.

Dandelion Greens with Roasted Parsnip and Turnip Skordalia — How about adding one more Greek touch to your Thanksgiving table this year? These healthy dandelion greens topped with the classic Greek garlic dip that I’ve made with fall-friendly parsnips and turnips instead of potatoes will do the trick.

Peppers Stuffed with Rice and Mushrooms – Bringing bright Orange and Red Peppers stuffed with earthy mushrooms and rice to your table will not only complement Thanksgiving hues and your tablesettings to a tee but provide a scrumptious alternative to stuffing.

Arugula, Cranberry, Pecan and Feta Salad — This refreshing salad combining Thanksgiving favorites such as cranberries and pecans along with refreshingly bitter arugula greens and creamy Feta will provide a much-needed lighter bite to counter all the rich foods on your holiday table.

Who needs Pumpkin Pie? — But do end your meal with something sweet, creamy and of course Pumpkiny (this is Thanksgiving after all): try this Pumpkin Rizogalo (rice pudding) or Pumpkin and Coconut Milk Panna Cotta. Better yet: Persimmon Walnut Cake in Orange Syrup — This sweet confection is inspired by the Greek Karydopita but uses seasonal persimmons for that little something different.
